How to make Canarian Mojo Sauce

This is the sauce, the Mojo Sauce.

Where I come from, that would be – Canary Islands, we have a special sauce which we pretty much enjoy with everything. I would like to share this with you.

  • 150ml olive oil
  • 20ml vinegar
  • 8 garlic cloves
  • 2 cayene chilli – optional to make spicy
  • 1 big red pepper (remove the seeds)
  • 1 teaspoon sweet chilli powder (paprika powder – mostly for color)
  • 1 teaspoon powder cumin (jeera)
  • 1/2 teaspoon salt

BLEND IT.

For thicker texture – pan fry bread and blend it in with the sauce.

When making the sauce, I realized there was an oily taste to it. This could be possibly due to the olive oil being too strong, to counter act the taste, I added 3 teaspoons of tomate puree.

How to make Hummus

Hummus is one of my favorite sauce? side dish? lunch items? – that’s the thing about hummus, it works as a replacement for pretty much anything if done right.

To start you will need the following ingredients – This yielded me a 1L container of Hummus.

For the chickpeas, if you can get them fresh that would be much better. You will have to soak them overnight with 1/2 teaspoon of baking soda. In the morning, cook them in a pressure cooker until you get 4 pressure whistles. (don’t throw the water away, it will be used later on)

  • 500gr Chickpeas
  • 1/2 Cup Lemon Juice
  • 1/4 Cup Tahini Paste
  • 1 Garlic Clove – Minced
  • 2 Tablespoon Olive Oil
  • 1/2 Teaspoon salt
  • 1/2 Teaspoon ground Cumin (Jeera)
  1. Blend Tahini Paste and Lemon Juice – make it creamy.
  2. Add Olive Oil, minced garlic, cumin, salt – blend
  3. Add 250gr of chickpeas – blend – add the rest and blend

To improve the creamy texture, add water – 2-3 Tablespoons should do it. I used the water which was left over from the pressure cooker.

If you like the off taste which hummus gives in some places, then add a bit more of the tahini paste.

To serve, I garnish with parsley and olive oil – some even use paprika.

Review – Five Fat Monks

I will be reviewing my food experience at Five Fat Monks.

First all let me start by saying, I ordered food from here and have not tried the food at the restaurant as of yet. So my review purely is about their delivered food. – Which may vary in some taste but will definitely vary in the ambiance, quality of presentation and freshness of the dish.

I had a Chinese food craving for which I decided to order from Five Fat Monks in Linking Road. To my surprise they also knew about MSG and do not use it in their foods – which is definitively a plus for a Chinese cuisine restaurant. I ordered a pretty balanced meal –

The chicken yakitori should not go wrong, however I would say they had left me desiring for better chicken. Sure they tasted okayish – I would rate them 6/10 however, as you can see, that’s how it was delivered to me – quantity is low (definitely low for a ninja’s diet), the sauce is very runny and all at the bottom and the chicken had become soggy in their delivery box. (200 Rupees)

The next dish I ordered was their King Kaphrao Rice – Which should be made of Minced Chicken, Basil, Red Chili, Rice and a fried Egg. As for the ingredients mentioned – sure they were all there, but they were limited – apart from the rice. The dish is presented in a manner which could work as a whole meal, but a protein lover will fall short of meat and 1 simple egg. I personally would add more chicken, perhaps a sauce instead of basil and chili and add 2 egg whites to the rice mix to give a better consistency – definitely not worth the 295 Rupees.

Overall score for delivered food – 5/10

How to make chocolate chip cookies

This is my first attempt on making chocolate chip cookies and it did not turn out quiet well for me,- the reason is the flour, there is something I am not doing correctly – and I believe either its getting the butter mixture correct or that simply put, the dough was not battered enough to create a good mix/ – nonetheless, this is the first attempt and it was done as follow – Ingredients List –

  • 1 Cup Brown Sugar
  • 1/2 Cup Granulated White Sugar
  • 2 Eggs
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 300gr All purpose flour (3 cups flour)
  • 1 cup unsalted butter – white (2 sticks)
  • 1 teaspoon baking soda
  • 2 Cups chocolate chips
  1. In a mixing bowl, add flour, baking soda, salt and mix together
  2. In a separate bowl, mix the brown sugar, white sugar and butter – my mistake was not knowing butter was supposed to be in liquid form, so I ended up heating this mixture to melt it down.
  3. Make sure the sugar mixture is properly blended together and has formed a paste like texture. Now slowly pour the flour mix and 2 eggs.
  4. Mix to death, yeah, mix it all you can.
  5. Add chocolate chips and mix it up so that there are pieces everywhere evenly.
  6. Bake n enjoy

I made the same cookies with the following ingridients

  • 2 cups of flour
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 3 teaspoon of vanilla extract

The cookies came out softer than the ones above and definitely much more sweeter – which i preferred, but my sister preferred my initial batch of cookies hmm..

How to make home made cheese

How to make home made cheese or Paneer, just a few steps to a proper treat which you can have during breakfast, use as part of your indian dishes or just eat on its own.

Ingredients

  • 1L unpasteurized Whole Milk – 62 rupees
  • 3 Lemons (4 lemons for 10 rupees)
  • Cheese Cloth (32 rupees for 1 meter)
  • 1 Teaspoon salt – 1 rupees

Recipe Steps

  1. Get the milk to boil – not scorching boil but hot enough so that froth and small bubbles start appearing on the surface
  2. While you are heating it up, constantly stire and make sure nothing sticks to the bottom. Once it reaches its boiling state – turn off the fire.
  3. Squeeze the juice of those 3 lemons into a cup and pour it into the milk.  Mix
  4. The curd(white pieces) will separate from the whey (transparent liquid)
  5. Leave for 10 minutes
  6. Pour through the cheese cloth to collect all the curd  – you can use the whey later on for other cheeses like ricotta – (which I still have to try)
  7. Put the curd onto a plate, break it up, add the salt and kneed i together well. Add again to the cheese cloth.
  8. Once all whey has drained – You have your cheese.

You can eat it warm, or put it into a container and cool it down in the fridge.  In my version on the cheese, I added some blackpepper, as its  a condiment I use always with cheese. You can add anything you wish.  While serving I recommend adding a bit of olive oil on top.

The cheese which comes by using lemon juice becomes hard, there are other means of seperating the curd from the whey which yield softer home made cheese. – These I will describe once I try them myself.

How to make Pizza Dough

How to make pizza dough in a few easy steps. Anyone with no experience and new to the baking scene can name this. I love my pizza, so there is no way im going allow people to serve me crap pizza – which tends to be the case in all restaurants in Mumbai, India. Their bases are not crispy, if they are, then its papad thin and the cheese, who invented that god awful processed cheese. Amul cheese is the worst thing ever to be made on earth. However, taste buds do tend to vary and people here are used to this shit.

In this post I will show you how to make your own dough and throughout time, will also show you how to make you own pizza sauce and cheese.

Ingredients list – After the dough rose, I could make 3 Large pizzas.

  • 500gr / 4 cups All purpose flour or Maida – 20 rupees
  • 2 Teaspoon / 7gr Dried Active Yeast – 5 rupees
  • 1 Teaspoon 4gr Sugar – 2 rupees
  • 1 1/2 cup warm water – Free?
  • 1/4 cup of olive oil – 30 rupees (based on 1L = 499 rupees)
  • Pinch of salt ( 1/2 Teaspoon)  – 1 rupees
  1. In a bowl, pour warm water, add yeast and sugar, mix and leave for 10 – 15 minutes. It will be ready when there are bubbles forming on the surface of the mixture, this means the dry yeast is now active.
  2. Pour flour into a big bowl, add salt and mix.
  3. Make a opening in the center of the mixture, like a volcano and pour the olive oil there and pour the yeast mixture there.
  4. Mix the dough, mix well for 10 minutes, keep at it. Sure add bit of flour every now so that it does not stick to your hands.
  5. On a plane surface, add some flour so that the dough doesn’t stick and kneed it for 10 more minutes.
  6. Form the pizza dough into a ball and put it back into the big bowl
  7. Cover the bowl with a damp cloth and leave for 1 hour.

Note – I had to leave my last pizza dough for 4-5 hours as it was not rising fast enough. This is usually due to the quality of the yeast – which in India,  did seem a bit shabby from the local store i got it from.

Spanish Omelette

A Spanish omelette or Tortilla in spanish, is one of the main staples of Spanish cuisine. It consists of an egg omelette made with potatoes and fried in vegetable oil.

Tortilla means – small cake, thus its thickness when prepared. Unlike a plain french omelette, this omelette has a juicy thickness which can be achieved by the addition of potatoes and other vegetable ingredients.

Recipe Steps – Depending on the size, you should have ingredients so that there is a nice amount of sliced potatoes and they are fully covered by egg when you put them into a pan.

  1. Slice potatoes
  2. Chop onions very finely
  3. Pan fry potatoes and onions (cover the potatoes for a while so that they are properly cooking from inside, they should be soft once you are done cooking them.)
  4. Whisk eggs, add parsley, salt and pepper
  5. Add the potatoes and onions to the whisked egg mix
  6. Pour the whole thing into a pan and cook, make sure to check the corners so that it doesn’t stick. – cover the omelette if you must, to cook it properly from within
  7. Flip once to cook the other side

Gostana in Khar

Gostana in Khar
Gostana is described as a fast food joint with “kick ass” burgers. It’s located in Khar near Elbo Room.
This month I’m trying to be a vegetarian to see what the health implications are in relation to my daily weight lifting. I’m trying to eat at home to ingest good food. However it was one of those days when there is no food at home and there is an outing, so searching for nearby places, I came across Gostana.
First impression walking towards the restaurant as I find my way behind the building, I was expecting a shabby place however it turned out to be like judging the book by its cover. Once inside I was greeted by the owners (I suppose) a lovely lady (good looking too) which made me feel welcome. I looked around to find a place for two but they were all occupied, there might have been 4 tables max. Not a problem, in the corner they have a floor seater, where you can take your shoes off and feel at home. The decor is young, with music based images and just looking at my side I found a guitar lying, perhaps for anyone to use. Too bad I don’t play… someday.
Well, once accommodated, I was given the menu to choose from, the specials were mentioned – from which I learnt that Non Veg is what they are known for!! Bad luck of mine. Nonetheless, they did have a vegetarian offering and I went for the Spinach and Cottage Cheese Burger and multi grain bread. As a matter of fact, she read my mind – as before asking for something good, she offered that burger to me. My cousin, she went for the humus.
First impressions –
1. The Spinach Veg patty is tasty, it reminded of sindhi sai bhaji dryed out and squashed. I loved it. The cheese as usual okayish. The downside was the bread, a bit simple and dry -(they do mention their health cooking and might avoid butter to make the bun tastier). – the second bad impression was the use of microwave. A kitchen with microwave is not a serious kitchen. Should use a baking oven at appropriate heating to avoid food getting dry.
The side salad was a small cup of corn – I personally don’t eat corn.

2. Humus – was great. The side bread and salad not worth it.

3. Everything is made as if it’s home made, perhaps they should avoid typhoo green tea and use loose leafs.

So what’s the verdict? As a vegetarian on the day – I would avoid it if you’re a true burger conossiour. The lovely lady did tell me to come back whenever I pick up meat again. And I will give them another go!

The mood inside, the lighting, the great music and good people running it does make it an experience so my verdict is based on food only. I would give it a 2/5 for vegetarians. Let’s see when I go for the meat!

Life & Fear
The biblical framework talks about law, with 10 commandments being the solution to humanity’s woes. The Greek framework talks about the oppresor and the oppressed, where you must instil order by control to ensure freedom. Unfortunately, these two govern our modern day society and thought process. What both models fail to understand is that life is not a problem that requires solving. It is a sight to be seen, and contemplated upon, so that we see ourselves truly and eventually open ourselves to joy without seeking change in the world. Hence, the great value given in India and other eastern countries to Darshan, the act of seeing.
Most people when they go to temples, they are there to see a statue, others say they go to see God, others for the “peace”. No one goes to rave there. Many even go looking for answers, but how many of those go to see themselves for who they are infront of the “Divine”?. How many pay attention to themselves? Perhaps who they are in temples can be dignified as divine. – thinking all are one, respecting strangers, speaking only when necessary, having control over the mind etc etc.
Darshan, reveals that fear of death pervades in nature. It’s not the almighty, but fear of death which impulses one to think “I want to die a good man/women” “I want to die thinking of the divine, I wanna die in peace” …
Fear makes us shun potential predators. Fear makes us want to dominate and discriminate. Humans alone have the power to outgrow this fear, discover love and include the stranger. To enable this is Dharma. But human imagination often amplifies fear. Fear cripples our mind and narrows our view of the world as we invent predators, and create structures and hierarchies to exclude them rationally. This is adharma. The problem is that acts of adharma must not incur outrage, but compassion, for adharma is rooted in imagined fear. Anger only amplifies this fear; love only can dissolve it.

One day the great philosopher came upon an acquaintance, who ran up to him excitedly and said, “Socrates, do you know what I just heard about one of your students?”

“Wait a moment,” Socrates replied. “Before you tell me, I’d like you to pass a little test. It’s called the Test of Three.”

“Test of Three?”

“That’s correct,” Socrates continued. “Before you talk to me about my student let’s take a moment to test what you’re going to say. The first test is Truth. Have you made absolutely sure that what you are about to tell me is true?”

“No,” the man replied, “actually I just heard about it.”

“All right,” said Socrates. “So you don’t really know if it’s true or not. Now let’s try the second test, the test of Goodness. Is what you are about to tell me about my student something good?”

“No, on the contrary…”

“So,” Socrates continued, “you want to tell me something bad about him even though you’re not certain it’s true?”

The man shrugged, a little embarrassed.

Socrates continued, “You may still pass though because there is a third test – the filter of Usefulness. Is what you want to tell me about my student going to be useful to me?”

“No, not really…”

“Well,” concluded Socrates, “if what you want to tell me is neither true nor good nor even useful, why tell it to me at all?”

The man was defeated and ashamed and said no more.
